The grapes are hand-selected on the vine for maximum maturity. Gentle pressing to extract only the best first -run juices. The must is cold clarified, no malolactic fermentation. Vinified on lees for 7 months in stainless steel, then blended with 40% reserve wines before bottling.

The grapes are hand-selected on the vine for optimum maturity, then gently pressed to extract the best first- run juices. The must is cold clarified before undergoing thermoregulated fermentation at 18 degrees without malolactic fermentation. Vinified on lees for 7 months in stainless steel vats before blending with 25% reserve wines before bottling.

100% of grapes are exclusively from southeastern vineyard of Bouzy (chalky subsoil covered with a rich seam of alluvium) The grapes are hand selected on the vine for optimum maturity, then gently pressed to extract the best first- run juices.
