Grand Cru Champagne
Founded by Eugene Savès in 1894 the Savès family has been dedicated to growing vines and producing champagne. Hervé and his son Arthur are the current descendants.
Situated in the Grand Cru terroir of Bouzy in the Montagne de Reims, the vineyards are southeast facing, the soil is chalky and covered with a rich alluvium that gives a full vinosity and great structure to their champagnes. Bouzy is also well-known for its production of Bouzy Rouge, a still red wine. The Savès family also hold vineyards in Grand Cru village of Ambonnay and Tours-sur-Marne.
They have 11ha consisting of 85% mature Pinot Noir and 15% Chardonnay and have been practicing sustainable viticulture for over 30 years and hold HVE certification. Severe grape selection during harvest is done to produce top quality must (juice). Hervé and his family vinify with art and delicacy. Their wines do not go through malolactic fermentation to get a more refined and lively champagne. The bottles mature at least 4 years in their cellars.
