Founded by Eugene Savès in 1894 the Savès family have been dedicated to growing vines and producing champagne. Hervé and his son Arthur are the current descendant.
Extra Brut Blanc de Blancs – 100% Bouzy Chardonnay from a 3,783sq m single vineyard, ‘Les Mont des Tours’ more than 20 years old. South facing plot and low yield gives this cuvée it’s finesse and body. Production of just 3,000 bottles.
The grapes are hand selected on the vine for optimum maturity, then gently pressed to extract the best first- run juices. The must is cold clarified before undergoing thermoregulated fermentation at 18 degrees without malolactic fermentation. First ferment in barrels and then aged on lees for 8 months before bottling.
- Aged in natural temperature of 10 degrees in chalk cellars. Bottled aged on lees for 5 years minimum before disgorgement. Disgorgement date laser etched on base of the bottle, disgorgement currently Nov 22
- Dosage 4g/l
- Aromas of Chardonnay from Montagne de Reims featuring minerality, grapefruit and pear. Extremely fresh and clean on the palate. Punctuated with delicate spices and a long saline finish.
