Elegant GRAND CRU CHAMPAGNE

For four generations, the Moineaux family has been tending their vines in Champagne in accordance with tradition. Marcel started crafting champagne in 1942, then his three daughters took over in 1981, joined by their children Thibault and Olivia.

 

Their 6.3ha of vines are entirely located on the sunny hillsides of the Côte des Blancs in Chouilly, which is part of an elite group, as only 17 of the 320 Champagne villages have earned the Grand Cru appellation.

 

Their vineyard is planted exclusively with Chardonnay with an average age of 50 years.
Their respect for the environment has naturally led them towards sustainable cultivation: using compost and bark as fertilisers, and diffusers for sexual confusion instead of insecticides.

 

During the harvest, the grapes are gently pressed in a 4000 kg membrane press. This method allows them to extract the heart of the cuvée, pure juice, which will be the foundation of their wines. These musts are then carefully separated to preserve the pure and original expression of each of their 12 parcels of vineyard. Fermentation is temperature-controlled in stainless steel tanks. Malolactic fermentation is partially carried out to impart a touch of sweetness and roundness to their wines when desired.
